May: Wienerbrød

 

Wienerbrød is completely unknown in the cafés and confectioneries of Vienna, but is well known internationally as “Danish Pastry”.

However, not everything which is called Danish Pastry has something to do with these Danish pastry baked goods. Characteristic for Wienerbrød is the filling. The so-called “Mayor’s batter” consists of butter, sugar and marzipan, often together with vanilla cream. The baked goods are decorated with fondant and flaked hazelnuts. The dough is especially moist, tender and finely layered, and contains a lot of roll-in shortening.

It is said that the Wienerbrød was developed around 1860 by Viennese journeymen bakers who had been enlisted to Denmark as, at that time, there was a scarcity of trained journeymen bakers there.
