What is a malt extract? A malt extract from IREKS is an enzyme inactive, concentrated, aqueous extract of malt containing all water-soluble malt components, such as sugars, proteins, minerals and flavourings. Which malt extracts are available from IREKS? On the one hand, IREKS offers light and dark liquid malt extracts. The dark malt extract is stronger in taste than the light one. The colour of malt extracts is altered by using various temperatures during the manufacturing process. On the other hand, dried malt extracts in powder form are also available. These are (light or dark) malt extracts based on a flour carrier. As carriers, IREKS uses different types of pregelatinized flours. |  | Where are malt extracts applied? For baked goods based on wheat flour such as bread, rolls and baguettes, as well as for baked goods based on rye flour such as wholemeal bread, pumpernickel and mixed rye bread. Malt extracts are equally of essential importance in the production of crackers, snack products, rusks and grissinis. Owing to their qualities as regards taste, malt extracts are mainly used as flavour and aroma enhancers. As malt extracts contain natural yeast food, vitamins and minerals of the malt, they also form the ideal environment for the optimum development of the dough, resulting in an enhanced proof and a more pleasant crumb colour. Further ingredients of the malt extract, such as dextrins and similar special sugars, do not only enhance the taste but also improve the stability and smoothness of the doughs as well as the freshkeeping and help reduce the risk of breaking e.g. in biscuits.
